This is an Avocado Egg Roll recipe – copycat of Cheesecake Factory. If you have ever had these delicious egg rolls from Cheesecake Factory, you know how wonderful these are. Likewise, if you are a fan of avocados, you are going to love these. And, it cost much less than ordering them at the restaurant.

Plus, we are going to use an air fryer to cook these egg rolls instead of frying them in oil.

It only takes roughly 20 minutes to make and even less time to devour them.

Picking A Good Avocado

It can be a little intimidating picking out avocados. But, here are a few tips you might find helpful.

  • The skin is very dark green (almost black) and could be almost purple
  • The outside is uniform, with no cracks or brown mushy spots.
  • Hold the avocado in your palm– apply very gentle pressure.
  • If there is no give and it is very hard to the touch the avocado it is not ripe yet.
  • If it is mushy or stays dented when you press on it, it’s too old.

The best way I have found that extends the life of an avocado is to immerse the avocado completely in water and refrigerate it. I have used avocados up to a week later and they are just as fresh as the day they were bought.

On With The Avocado Egg Roll –

INGREDIENTS

  • 3 avocados, halved, peeled and seeded
  • 1 Roma tomato, diced
  • ¼ cup diced red onion
  • 2 tablespoons chopped fresh cilantro leaves
  • Juice of 1 lime
  • Kosher salt and freshly ground black pepper, to taste
  • 8 egg roll wrappers

FOR THE CILANTRO DIPPING SAUCE

  • 3/4 cup fresh cilantro leaves, loosely packed
  • 1/4 cup sour cream
  • 1 jalapeno, seeded and deveined, optional
  • 1/4 cup mayonnaise
  • 1 clove garlic
  • Juice of 1 lime
  • Kosher salt and freshly ground black pepper, to taste

INSTRUCTIONS

Get the air fryer out, Preheat the air fryer to 400º F.

  • To make the cilantro dipping sauce, combine cilantro, sour cream, jalapeno, mayonnaise, garlic and lime juice in the bowl and mix, season with salt and pepper to taste. Set aside.
  • In a medium bowl, gently mash avocados using a potato masher. Add tomato, red onion, cilantro, lime juice, salt and pepper, to taste, and gently toss to combine.
  • Working one at a time, place avocado mixture in the center of each wrapper. Bring the bottom edge of the wrapper tightly over the filling, folding in the sides. Continue rolling until the top of the wrapper is reached. Using your finger, rub the edges of the wrapper with water, pressing to seal. Repeat with remaining wrappers and avocado mixture. Spray each side with cooking spray.
  • When ready, pull out the tray and place sprayed egg rolls into the air fryer pan. Air fry at 400º for 8 minutes, flipping halfway through.
  • Serve immediately with cilantro dipping sauce.

NOTE: to fry – You can also cook these in 1Cup vegetable oil – fry until evenly golden brown and crispy, about 2-3 minutes. Transfer to a paper towel-lined plate.
